Eat Before You Paint: Thanksgiving Pumpkin Pancakes

Before you start painting, you need to…eat! Yes, I’m giving you permission to eat, specifically, a combination of complex carbs, protein and fats, so that you have the energy you need to make compelling art. I’m going to help you - not with the eating part, you’ll do that on your own - but with a delicious recipe that’ll give you the stamina you need to express your own creative voice with relish! Pumpkin Quinoa Pancakes Makes (2) 8" round pancakes

Ingredients:
- 2 large or extra large eggs
- 1/4 Cup water
- 1/4 Cup pumpkin puree
- 1/3 Cup quinoa flakes
- 1 TBP oat flour or wheat flour
- 1/8 TSP salt
- 1/8 TSP baking soda
- 1 TSP vanilla
- 1 TSP cinnamon (optional) Utensils
- 8" non-stick fry pan
- Whisk
- Medium size mixing bowl
- Ladle
- Spatula

To make: - Whisk the eggs, water and pumpkin puree together briskly until frothy
- Add quinoa flakes, flour, salt, baking soda, vanilla, cinnamon and whisk until fully blended
- Heat the pan over medium heat for a few minutes and ladle half the batter into the pan
- Flip pancake when looks dry around the edges
- After 3+ minutes remove pancake and put the rest of the batter in the pan and repeat.
NOTE: - Each stove is different! Know how yours works and adjust heat and timing accordingly
- Delicious with honey, jam, applesauce, or my favorite -/ pure maple syrup!
